Municipal Vinegar Cellar
Cooked grape must, matured through slow acetification and fermentation. A very long aging process in bottles of different sizes and different types of wood, without the addition of other ingredients. A final product with a dark brown color, intense and glossy. A “sliding syrupy” consistency with a “sweet and sour” flavor, velvety hues, and an aroma with a “pleasing and harmonious acidity”.
These are just some of the features of the Traditional Balsamic Vinegar of Modena, as described by the tasters of the Consortium according to a recipe that is centuries old. One of the most important products in the territory of Modena, recently, this “black gold”, with its unmistakable flavor, has also found a home in Maranello.
In 2012, the city’s’ Municipal Vinegar Cellar opened in Via Abetone Superiore n. 196. In an attic in the small town of San Venanzio, the grape must from this territory matures, ferments, and ages to the right point – as tradition demands! Open upon appointment on Sunday mornings, during the months of June, July, and August, the Municipal Vinegar Cellar in Maranello offers the opportunity to see what goes on behind the scenes of the production of a unique product, witnessed since 1508… and, of course, have a little preview taste, as well.
