In Modena Nocino is the liquor “par excellence”. It has an ancient tradition due to the abuntant presence of walnut trees grown in several localities between Secchia and Panaro rivers. The liquor is clear with a dark brown colour, it has an intense smell with walnut and aromatic flavour. Its pleasant and lasting taste is typical of an unripe walnut.
Walnuts are harvested before the shell start to harden and they represent the main ingredient that give Nocino its peculiar and sensorial characteristics. An infusion is then made with alcohol and walnuts of “Juglans regia L” variety.
The harvest is made between June, 1st and July 15th in order to have a good level of immaturity of the product.
